For the Tart Shells:

200 grams flour
100 g sugar
100 grams butter
1 egg yolk

For the Lemon Curd:

juice of 3 lemons
zest of 2 lemons
200 g sugar
4 eggs
20 grams butter

Preparation :

Preparation of tart shells:

First, add the flour, sugar, pieces of butter, egg yolks and a pinch of salt to the bowl of your robot.
Mix everything until you get a dough, then make a ball out of your dough, wrap it in plastic wrap and put it in the fridge for 30 minutes.
Preheat your oven to 180° then grease the tartlet molds with butter.
Flour a work surface then roll out your dough with a rolling pin, stretch your dough into the molds and prick the bottom with a fork.
Place a piece of parchment paper on each dough with dried beans and put in the oven for 10 minutes.
Then remove the parchment paper and dry beans and brown for another 10 minutes.
Remove your tart shells and leave on a plate to cool.

Preparation of Lemon Curd:

First of all, put lemon juice in a vessel, add lemon juice and sugar on top.
Add eggs on top and beat, then add butter in small pieces and continue to beat.
Place the saucepan over low heat for 15 minutes, whisking the mixture without boiling, then continue whisking until the mixture thickens.
Leave to cool in a bowl then distribute your lemon curd across the bottom of the tartlets, serve and wish everyone bon appetit.
