Component :

For the Spinach Sponge Cake:

  • 200 grams flour
  • 120 grams spinach
  • 200 g sugar
  • 100 grams butter
  • 4 eggs
  • 8 grams baking powder

For Strawberry Cream:

  • 200 grams strawberries
  • 250 g mascarpone
  • 60 g sugar
  • 32 cl cold full cream
  • 10 ml lemon juice
  • 6 g powdered gelatin

Preparation :

Preparation of Spinach Sponge Cake:

First of all, preheat your oven to 180°, line a mold with parchment paper, wash the spinach leaves and melt the butter.
Then put flour in the bowl of your mixer, add spinach leaves, sugar, melted butter, eggs and baking powder.
Then mix everything to make a homogeneous paste.
Pour it into the mold, spread it with a spatula and keep it in the oven to cook for 35 minutes.

Preparation of Strawberry Cream:

First of all, wash, peel and chop the strawberries, blend them to make a puree, put the gelatin in a bowl with 3 tbsp of water.
Then beat the mascarpone with the sugar in a bowl.
Add lemon juice and strawberry puree then mix well with marise.
Then add gelatin and mix again.
In another bowl, beat your whipped cream with a beater then add half the strawberries to the bowl and mix with a spatula.
Put the other half in a piping bag and keep it in the fridge.

Meeting:

When the spinach sponge cake is cooked, turn it over, crumble the edges and keep aside.
Put the sponge cake back into the mold then spread your strawberry cream on top and put your mold in the freezer for 20 minutes.
Finally take out your mold, cut into squares, decorate with whipped cream from a pastry bag, add a slice of strawberry and sprinkle with the reserved crumbled sponge cake and enjoy your meal.
