Component :
- 2 potatoes
- 3 carrots
- 3 parsnips
- 2 leeks – white part only
- 3 stalks of celery
- 400 g tomatoes
- 60 grams peas
- 60 grams corn
- 100 grams kale
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 tsp dry carom seeds
- 1 tsp Italian seasoning
- 4 cloves of garlic
- Salt
- Chilly
- 1.5 liters vegetable broth or chicken broth
- small squeeze of lemon juice
Preparation:
First start by preparing your vegetables:
Cut the leek into thin slices, the carrot into small dice, the parsnip into small dice, the celery, tomato, cabbage and potato into small dice, and then chop the garlic.
Then put butter and oil in a pan and keep it on medium heat.
After butter and oil are melted, add leeks, carrots, parsnips, celery and potatoes with salt and pepper and stir for 4 minutes.
Then add Italian seasoning, dried parsley, garlic, tomatoes, peas, kale, broth and bring to a boil.
Then reduce the heat and cook for another 15 minutes.
Then add corn, a little chopped parsley and lemon juice, remove everything from the heat.
