16 chickpea cookies
250 g mascarpone
50 g sugar
1 tbsp amaretto
1 cup espresso coffee
First separate the egg white from the yolk, put the coffee and amaretto in a bowl, dip your biscuits 4 by 4 in it.
Then beat the mascarpone lightly with the help of a whisk in a bowl.
Add the egg yolks and continue beating with the whisk to combine everything.
In another bowl, beat the egg whites with sugar and a pinch of salt with a mixer.
Add half the egg whites to the mascarpone bowl, mix with the marzipan, then add the other half and mix again.
Place 8 biscuits on the bottom of a dish, pour half of your preparation on top, place another 8 biscuits on top and spread the rest of the mascarpone preparation on top.
Keep the dish in the fridge for at least 2 hours.
Sprinkle with cocoa then cut into pieces and serve, everyone has a good appetite.
