For the Chocolate Brownies:
80 g flour
200 grams dark chocolate
100 g sugar
180 grams butter
For the Mascarpone Whipped Cream and Chocolate Glaze:
125 grams dark chocolate
100 g mascarpone
32 cl of 30% fat liquid cream
25 g icing sugar
1 sachet of vanilla sugar
1 vanilla pod
Preparation of Chocolate Brownie:
First of all, preheat your oven to 180°, put butter and flour in a square cake tin.
Then melt the chocolate with butter into pieces in a bain-marie, stirring with a spatula.
Blanch the eggs with the sugar in the bowl of your stand mixer for 6 minutes until the mixture has doubled in volume, then add the melted chocolate.
Mix it three times while whisking on medium speed and then add the sifted flour and this time mix it with Maryse to make a homogeneous paste.
Pour your brownie batter into the pan, smooth out with a spatula, and then bake in the oven for 25 to 30 minutes.
Preparation of Mascarpone and Chocolate Whipped Cream:
First of all, put mascarpone and cream in a bowl and keep it in the fridge for 20 minutes.
Take it out and add icing sugar, vanilla sugar, vanilla bean seeds gradually increasing the speed.
Once your cream has hardened, put it in a piping bag and put it in the fridge.
Then melt the chocolate in pieces in a bain-marie.
When your brownie is cooked, don’t mold it, spread a layer of mascarpone cream over it, smooth it out with a spatula, and then add another layer of chocolate over it.
