Here’s an easy at-home recipe for cinnamon cookies, a soft and healthy cookie that pairs well with your cup of coffee.
Component:
– 100 grams flour
– 3 tsp cinnamon
– 6 cl coconut oil
– 6 cl of maple syrup
– 8 cl date syrup
– 1 tbsp chia seeds
– 2 tbsp water
– 50 grams oatmeal
– 1.5 tsp baking powder
– 1 tsp vanilla extract
– Salt
Preparation:
First of all, soak chia seeds in a bowl in 2 tbsp of water for 15 to 20 minutes.
Then put the oatmeal in the bowl of your food processor and blend for a few seconds to make oatmeal… set aside.
Then heat coconut oil in a pan on medium heat till it melts.
In a large bowl, whisk together the flour, cinnamon, a pinch of salt, oatmeal and baking powder.
Then top with soaked chia seeds, melted coconut oil, maple syrup, date syrup and vanilla extract.
Make a dough by mixing all the ingredients, then keep it in the fridge for at least 30 minutes.
Preheat your oven to 180° and line a baking sheet with baking paper.
Make small balls from your dough, place them on a baking sheet keeping a space between them and flatten them slightly with your hands.
Then put your baking sheet in the oven for 12 minutes and bake until the bottom is golden… let cool.
