For the Chocolate Mousse:
– 240 grams dark chocolate
– 4 egg yolks
– 50 grams of sugar
– 48 cl of heavy cream
– 1 tbsp infused espresso
– 1 tsp vanilla extract
For Garnish:
– 24 cl of whipped cream
– 100 grams dark chocolate
Preparation:
Preparation of Chocolate Mousse:
To get a frothy mixture, first beat the egg yolk with sugar in a bowl with a mixer on medium speed for 2 minutes.
Put 18 cl cream in a saucepan and then heat over medium heat – do not boil it.
Pour half your hot cream into the bowl of eggs, beat on medium speed, then pour everything into the pan and mix.
Then put your pan back on low heat for 5 minutes, stirring with a spatula.
Remove pan from heat, add chopped chocolate, espresso and vanilla extract and mix to melt chocolate.
Pour your mixture into a salad bowl, fillet it, and let it cool completely.
In a bowl with your mixer on medium speed, whip 30 cl of heavy cream for 4 minutes.
Pour your chocolate mixture over the top and mix everything together with a spatula.
Fill the bowl and keep it in the fridge.
Filling Preparation:
First, beat the cream on medium speed for 4 minutes.
Melt the chocolate in a bain-marie, pour it onto a clean work surface, let it harden, and then make shavings with a knife.
Service:
Take your bowl out of the fridge, place 1 tablespoon cream on top, then sprinkle with the chocolate shavings.
