Chocolate and Vanilla Eclairs, a delicious cake for your afternoon snack, here you will find the easiest recipe to make it at home.

For the Eclairs Choux Pastry:
– 150 grams of flour
– 18 cl water
– 120 grams unsalted butter
– 4 eggs
– 1 tbsp sugar
– 1 tsp vanilla extract
– 1/2 tsp salt
– fine sugar

For the Chocolate Icing:
– 360 grams dark chocolate
– 18 cl whipping cream
– 2 tbsp unsalted butter
– 2 tbsp corn syrup
– Salt
Preparation:
Preparation of eclairs:
First preheat your oven to 180° and line a plate with baking paper.
Then put water in a saucepan, add butter, sugar and salt and keep on medium heat and stir with a spoon.
Bring to a boil so that the salt and sugar dissolve, then remove the saucepan from the heat.
Pour the flour over the top and stir with a spatula to form a paste for 30 to 50 seconds.
Then return the pan to medium heat and cook while stirring for 2 to 3 minutes.
Remove the pan from the heat, pour your mixture into a bowl and stir with a spoon for 3 minutes and let cool.
In another bowl, beat the egg and when the dough cools, pour the vanilla extract over it and mix.
Then add the beaten eggs — in several batches — while whisking with the spatula after each addition.
Fill a pastry bag with your dough then shape your eclairs on a baking sheet and sprinkle icing sugar over them and put in the oven for 25 minutes.
Let them cool for 10 minutes at the end of cooking.
Filling Preparation:
The day before preparation, put the pastry cream in a pastry bag in the refrigerator overnight.
Poke 3 holes in the bottom of your eclairs and then fill them with cream and wipe off any excess pastry cream.
Preparation of Chocolate Icing:
First, melt the chocolate in a double boiler or in the microwave.
Then heat cream and salt in a saucepan over medium heat.
Then pour the melted chocolate with corn syrup and butter on top and stir with a spatula to mix everything together.
Then dip each filled eclair in the chocolate frosting and place them on a wire rack to harden the frosting.
