Apricot jam for breakfast: simple and very tasty

Component :

2 kg apricots
1.8 kg sugar

Preparation of apricot jam for breakfast:

First wash the apricots, cut in half and remove the pits.
Then put them in a terrine, sprinkle with sugar, stir and leave to macerate in the fridge overnight.
The next day, put everything in a jam bowl and boil and skim off the top.
Cook on high heat for about 20 minutes after boiling, stirring, then using a slotted spoon to skim off the scum each time.
Use a cold plate to check whether it is cooked properly or not, put a little jam on top, it should set, else keep cooking.
At this stage you can either keep the jam as it is or blend it with an immersion blender as per your preference.
Then distribute in sterilized jars, close, turn upside down and leave to cool at room temperature.
