Apple Pie with Caramel Sauce

For Apple Pie:

2 shortcrust pastries
6 small apples
100 grams unsalted butter
3 tbsp flour
100 grams sugar
100 grams brown sugar
6 cl water

For the Caramel Sauce:

100 grams butter
200 grams brown sugar
24 cl liquid cream
1 tsp vanilla extract
1/4 tsp salt

Preparing Apple Pie:

Firstly peel the apples, core them and cut them into thin slices, preheat the oven to 180°.
Then melt butter in a saucepan over medium heat, add all purpose flour and stir with a spatula for 2 minutes to make a paste.
Pour water into another saucepan, top with sugar and brown sugar, mix, bring to a boil and cook over medium heat for 5 minutes.
Knead the dough on a work surface then roll out two doughs with a rolling pin.
Spread one pastry in buttered pie pan and prick the bottom with a fork and cut the other pastry into strips.
Place the apple slices in the mold on the dough and then cover them with the other dough strips and cross them.
Use longer strips for the middle and shorter strips for the edges, then fold and trim excess dough around the edges and pinch to secure.
Pour the butter mixture over the top, then the sugar syrup, making sure it penetrates and covers the apple slices.
Using a pastry brush, brush the top of the pastry with the remaining butter-sugar mixture and then place in the oven to bake for 35 to 40 minutes.
At the end of cooking, unmold your tart and leave to cool.

Preparation of Caramel Sauce:

First, melt the butter in a pan on medium heat.
Then add the brown sugar and stir to mix well over medium heat.
Once your mixture begins to boil, add the cream and cook over medium heat, stirring constantly with a spatula, then bring to a boil and cook over medium heat for 3 minutes.
Remove the pan from the heat, then add the vanilla extract and salt and mix again with the spatula.
You will see that your sauce is liquid but it will thicken as it cools.
Pour caramel sauce into jars and set aside then drizzle after apple pie is baked, cut and serve.
