24 cl of milk
50 grams ground almonds
1 vanilla pod
6g if if
2 eggs
4 tablespoons sugar
12 cl of cream

preparation :

First, split the vanilla pod in half lengthwise, collect the seeds and beat the cream with a beater in a bowl.
Then pour milk into a saucepan, top with vanilla pod and seeds with almond powder and bring to a boil.
Add the agar agar, mix and cook over medium heat for 3 minutes, remove the vanilla pod, let the pan cool for a moment before placing it in the fridge.
Separate the yolk from the egg white and then beat the egg white with the sugar.
Add egg yolk and mix with spatula then top with cream and vanilla almond milk mixture and keep mixing.
Divide into glasses, add raspberries and refrigerate for at least 3 hours before serving.
