  • 250 g sugar
  • 6 cl water
  • 3 egg whites
  • 1/2 tsp lemon juice

How to fix sugar syrup:
First of all put sugar and water in a vessel.
Then put it on medium heat and boil it stirring with a wooden spoon till the sugar dissolves well.
Then leave to boil without stirring until the syrup reaches 120° – use a thermometer.

In a bowl, beat the egg whites with a beater, then add the lemon juice and continue to beat.
Then whisk at maximum speed, adding the syrup to the syrup — don’t pour the syrup over the syrup.
Continue beating until the meringue is well-chilled and thickened, at least 3 minutes.

Using a spatula or piping bag, spread the meringue onto your pie and then pop it in the oven — under the broiler — for 5 minutes.
Take your pie out once the meringue is well browned – you can rotate the pie in the oven so the meringue browns evenly.
