24 cl lemon juice
1 bunch basil
zest of 1 lime
20 ml water
160 g sugar
1 egg white
Method for making lemon and basil sherbet:
First pour water into a saucepan, add sugar and lemon zest.
Place the saucepan over medium heat and let it heat until the sugar dissolves well and becomes a syrup, then let it cool.
Finely chop the basil leaves and beat the egg whites with a pinch of salt in a bowl
When the syrup cools down, add lemon juice, egg white and mix with marise.
Then add chopped basil and mix again.
Pour your preparation into your ice cream maker and let it run for about 20 minutes, which should be enough for your sorbet to set.
Put all the things in a container and keep it in the freezer for 3 to 4 hours.
Dip an ice cream scoop into hot water and make your sorbet balls.
Place them in bowls, wrap them in plastic wrap and put them in the freezer until ready to serve.
